Ingredients:

Bacon Jam

  • 1 lb bacon, cut into 1-inch pieces

  • 1 small onion, finely diced

  • 2 cloves minced garlic

  • ¼ cup brown sugar

  • ¼ cup apple cider vinegar

  • ¼ cup maple syrup

  • ½ cup your favorite BBQ sauce

Special Sauce

  • ¼ cup mayonnaise

  • 2 tbsp white vinegar

  • 2 tbsp ketchup

  • 2 tbsp relish

  • ½ tbsp sugar

Burgers

  • 2 lbs ground beef (80/20 blend)

  • Salt and pepper, to taste

  • 1.5 tbsp garlic powder

  • 8 slices cheddar cheese

  • Garlic butter

  • 4 brioche burger buns, toasted

  • Sliced tomatoes

  • Shredded lettuce

  • Dill Pickle chips

Directions:

  1. Prepare the bacon jam. In a large skillet over medium-high heat, add the bacon and cook for about 10 minutes until the fat is rendered and the bacon is brown, stirring frequently. Remove the bacon from the skillet and place on paper towels to drain. Remove all but one tablespoon of bacon grease from the skillet. Reduce the heat to medium-low and add the onion and garlic and cook for 5-7 minutes until the onions are soft and translucent, stirring occasionally. Add the bacon, brown sugar, apple cider vinegar, maple syrup, and BBQ sauce. Reduce the heat to low and simmer for about 20 minutes. Remove from the heat and set aside until ready to use.

  2. Prepare the special sauce. In a medium bowl, combine the mayonnaise, vinegar, ketchup, relish, and sugar. Cover and refrigerate until ready to use.

  3. Preheat your grill to 450°F (232°C).

  4. Season the ground meat with salt, pepper, and garlic powder. Using your hands or a burger press, form the ground beef into eight equal patties, about 4 oz. Place the burgers on the grill and cook for 4 minutes per side, until they reach an internal temperature of 145°F (63°C) for medium rare, or to your preferred doneness. Top each patty with a slice of cheddar cheese and allow the cheese to melt, about 2 to 3 minutes. Remove the burgers from the grill and transfer them to a platter.

  5. Place a cast iron skillet on the grill and allow it to heat up for about 5 minutes. Spread some garlic butter on each burger bun and toast them.

  6. Assemble the burgers by spreading some of the special sauce on the bottom buns, then place pickle chips, lettuce, tomato, two burger patties and top the patty with bacon jam. Finish by placing the top bun on the toppings and serve.
