Grilled Vegetable Skewer

What’s a backyard cookout without the grilled veggies? These Grilled Vegetable Skewers are a blast to prep and a joy to make on the Kenmore 4-Burner Smart Gas Grill. I'm always pleased with a well-seasoned veggie plate and I think this one’s a keeper!

Instructions

  1. Heat the BBQ to medium-high heat, about 400°F- 450°F.

  2. Place all the rinsed and chopped vegetables in a large bowl. Mix marinade ingredients in a measuring cup or small bowl and pour over the vegetables.

  3. Pierce each vegetable in the center of a stainless steel or bamboo skewer stick.

  4. Grill with the BBQ closed for 6- 8 minutes on each side until the vegetables are tender and charred.

  5. Transfer to a serving platter.

Note: If you choose to use bamboo skewers, be sure to soak the bamboo skewers in water for at least 1 hour before using them to prevent them from burning on the grill
