Directions

  1. Preheat your pellet grill to 225ºF (107ºC). Cut the peaches in half lengthwise and remove the pits. Place the peaches on the grill cut side down and smoke the peaches for 20 minutes. Remove the peaches from the grill and allow them to completely cool. Once they are cool, chop them into smaller pieces.

  2. Make the peach salsa. In a medium bowl, combine the smoked peaches, tomatoes, onion, cilantro, lime juice, jalapeño, salt, and pepper. Cover and refrigerate until ready to use.

  3. Increase the temperature of the grill to 400ºF (204ºC). Pat the pork chops dry with paper towels and liberally season the pork with the rub on all sides.

  4. Place the pork chops on the grill and grill them for about 15 minutes, flipping over halfway through, or until the internal temperature reaches 145ºF (71ºC) in the thickest part of the pork.

  5. Transfer the pork chops to serving plates, top the pork with the peach salsa and serve.
